Super Simple Coffee Cake

Good morning, everybody! I hope your week has been fantastic. I had originally shared this recipe some time last year, but as you know I lost ALL of my blog content. It’s so good, and so easy I wanted to share it again! It’s really the perfect recipe for when you’ve got limited time, or ingredients. I love that. It’s the perfect crumbly, yummy coffee cake, and it’s a hit around here every time.

If you’re like me, when I’m looking online for a recipe I REALLY don’t want to scroll for ten minutes before I get to it. So, I’m keeping it short and sweet. Here’s the recipe! The only thing I’ll add is that sometimes when I’m making this I’ll add half of the topping into the batter, and sprinkle the rest on top. It just depends on my mood. Sometimes I like to cut the topping sugar amount in half, too. That’s why I love this recipe, it’s versatile and simple.

Simple Coffee Cake

Serving Size 12

Ingredients

  • 3/4 cup sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1/2 cup milk
  • 1 3/4 cup flour
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 3 tsp baking powder
  • 1/4 cup sugar and cinnamon mixed
  • 1/8 cup pecans chopped, optional

Instructions

  • Cream together shortening and sugar.
  • Add eggs and vanilla. Mix well.
  • Add dry ingredients alternately with milk
  • Spread in prepared 9" pan
  • Mix cinnamon, sugar, and pecans. Spread evenly on top of batter.
  • Bake at 350 for 25 to 30 minutes, or until golden brown.
