How to Make Buttermilk Oatmeal Muffins

Simple, easy, nutritious, and delicious…these Buttermilk Oatmeal Muffins are always a hit, and a regular on our breakfast rotation!

I love good, simple, healthy recipes. I especially love them if they’re easy. I’m not a complicated cook, and recipes that have a huge ingredient list or complicated instructions are not my “thing”. These simple Buttermilk Oatmeal muffins have 8 ingredients total, are made with whole wheat flour, and have NO processed sugar. They check all of the boxes for me.

If you read my post on Intentional Simplicity you may remember me saying I have a regular meal rotation to help the days go smoother. This simple meal rotation system is in place for breakfast, lunch, and supper. On any given week I will make a batch of easy muffins. These are always a go-to. The 30 minute soak time gives me plenty of time to wash up a few dishes, start a load of laundry, or make my bed. I can even mix the oat and buttermilk up, sip my coffee, read my bible, and be ready to pop the muffins in the oven immediately after.

Ingredients:

  • 1 cup old-fashioned oats
  • One cup buttermilk
  • 1 egg
  • 1/3 cup maple syrup
  • 1 cup whole wheat flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/3 cup olive oil

Instructions:

  1. Preheat oven to 450.
  2. Soak oats in buttermilk for at least 30 minutes.
  3. Beat egg into oat mixture.
  4. Add maple syrup and mix well.
  5. Stir in flour, salt, and baking powder, mixing well.
  6. Add oil and mix only until ingredients are mixed.
  7. Bake in buttered muffin pan for 15-20 minutes or until golden brown.

These are perfectly sweet, just a little tangy, and SO moist and delicious. We love to slather a little butter on top, and eat them warm. They’re also really good with just a teeny tiny bit of homemade jam on them. Anyway you want, really, they’re just that good!
