How to Make Delicious Sausage, Kale and Potato Soup
This delicious sausage, kale, and potato soup makes a hearty meal perfect for a cold winter day. It hits the spot every single time.

This sausage kale and potato soup is such an easy weeknight meal. It’s always a hit here. Even the baby shovels in handfuls of it…Most of our evenings aren’t too busy anymore, but I still appreciate the ease of a one pot meal. I don’t know if I’ll ever be adult enough to love doing the dishes. ha!
I like to use my large Dutch oven for soup and stews. It seems to cook evenly, and nothing sticks. I especially like that aspect when I’m making anything with a cream base. They almost always stick in my stainless steel pots.
Ingredients
- 1 pound of ground Italian Sausage
- 1 onion, chopped
- 2 large potatoes, cubed
- 3 cloves of garlic, minced
- 1 bunch of kale, chopped
- 2 tsp salt
- 2 TB flour
- 4 cups chicken broth
- 3 cups milk
- 2 cups heavy cream
Directions
- In a large pot cook the sausage over medium high heat.
- Add chopped onion, and crumble together with sausage
- Stir in salt, and continue sautéing about 7-10 minutes or until sausage is thoroughly cooked.
- Add garlic, and sauté for a minutes or so until the garlic is fragrant.
- Drain grease from the sausage, and return to pot on medium high heat and stir in flour.
- Once the flour is incorporated, slowly add the chicken broth while stirring constantly. Go slow to prevent clumping.
- Slowly add milk while stirring continually.
- Add chopped potatoes , and turn the heat down to medium. Bring to a low boil.
- Once the soup is simmering, continue cooking for about 20 minutes, or until the potatoes are tender.
- When potatoes are tender, add the kale.
- Add two cups of cream and stir very gently. Turn the heat to low and let cook for another 15 minutes, until the kale has wilted.
I love to garnish my bow of soup with some crushed red pepper flakes. My husband loves to sprinkle a little bit of parmesan cheese on his. It is delicious no matter how you serve it!
Seriously one of the only things I enjoy about winter is soup. It is warm, comforting, and so simple to put together. I always love throwing stuff in a big pot, and coming up with new concoctions. It’s one of my favorite ways to create in the kitchen!
