I love a recipe I can have from skillet to table in less than 30 minutes. Especially in the morning. This simple breakfast hash checks all the boxes to make it the perfect choice for an easy weekend morning meal.
Every time I create a “new” recipe I’m reminded of Ecclesiastes 1:9b, “and there is no new thing under the sun.” I’m positive someone sometime between now and Creation has mixed these same exact ingredients together at some point…maybe in this very kitchen I’m cooking in today. Isn’t that amazing? It will never cease to amaze me that, even though something is “new” to me, it is not “new” to God. I am so thankful for His infinite knowledge and wisdom, and for giving us just a tiny portion of it here on Earth.
A few tips for making a great Breakfast Hash
- If you have it, use a cast iron skillet. They are my favorite to use from stove top to oven, and clean up is a breeze in a perfectly seasoned pan.
- This is such a versatile recipe. Add more veggies, less eggs, more meat, play around with it, and come up with the combination your family loves.
- Use whatever breakfast meat you have on had. Our favorite is ham, but if I have bacon or sausage I use that too. If I was feeling really adventurous, and terribly hungry, I’d even use all three!
- Don’t overcook the eggs! It took me a while to get my eggs just right. I had a tendency to overcook them under the broiler. They get chewy, and weird…trust me, you don’t want them overcooked, ha!
Simple Breakfast Hash
Ingredients
- 4 or 5 potatoes cubed
- 1 small onion diced
- 1 medium bell pepper diced
- 2 cups ham cubed
- 6 eggs
- salt and pepper to taste
Instructions
- Heat a 10" oven-safe skillet over medium heat. Add potatoes and cook for about 8 minutes. Add onion, and bell pepper and cook for an additional 10 minutes, or until potatoes are tender.
- Stir in the ham, and add salt and pepper if desired.
- Make small wells in the top of the hash, and carefully crack the eggs into the wells.
- Cover, and allow to cook over medium heat for about 3 to 4 minutes. Just until the egg whites start to set
- Transfer the skillet to the oven, and broil on high until the yolks are set how you like them. Usually 3 to 4 minutes is just right for us.
