Buttermilk Oatmeal Muffins

Ingredients

  • 1 cup old-fashioned oats
  • 1 cup buttermilk
  • 1 egg
  • 1/3 cup maple syrup
  • 1 cup whole wheat flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/3 cup olive oil

Instructions

  • Preheat oven to 450.
  • Soak oats in buttermilk for at least 30 minutes.
  • Beat egg into oat mixture.
  • Add maple syrup and mix well.
  • Stir in flour, salt, and baking powder, mixing well.
  • Add oil and mix only until ingredients are mixed.
  • Bake in buttered muffin pan for 15-20 minutes or until golden brown.
