Instructions
Preheat and Prepare
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
Mix Dry Ingredients
In a medium-sized bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, and cloves.
Cream Butter and Sweeteners
In a large mixing bowl, use a hand or stand mixer to cream the softened butter, honey, and molasses until smooth and well combined.
Add Egg and Vanilla
Beat in the egg and vanilla extract until the mixture is light and fluffy.
Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
Shape the Cookies
Roll the dough into 1-inch balls and place them on the prepared baking sheets, spacing them about 2 inches apart.
Bake
Bake in the preheated oven for 8-10 minutes, or until the cookies are set but still soft in the center. Avoid overbaking to keep them chewy.
Cool
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
