Instructions
Preheat Your Skillet
Start by preheating a cast iron skillet over medium heat. Add a drizzle of olive oil and let it heat until shimmering. The skillet needs to be hot but not smoking.
Prepare the Crust
Ladle about 1/2 cup of fed sourdough starter into the hot skillet. Spread it gently with the back of a spoon or ladle to create an even layer. Think of it as cooking a pancake—you want the batter to spread evenly.
Cook the First Side
Reduce the heat to medium-low and let the starter cook for about 5 minutes. Watch for the edges to firm up and the surface to bubble slightly. The goal is to cook the first side fully before flipping, as you’ll only flip it once.
Flip and Finish Cooking
Carefully flip the crust using a spatula. Cook the second side for another 3–4 minutes, or until golden brown and crisp.
Add Toppings and Enjoy
Remove the crust from the skillet and place it on a plate or baking sheet. Add your desired toppings—sauce, cheese, and anything else you love—and enjoy as a skillet pizza or bake it briefly in the oven to melt the cheese.
